Azuki or Adzuki bean
The Azuki bean or Adzuki bean is a small, reddish-brown legume with a long history of cultivation in East Asia, especially in China, Japan, and Korea. It is an annual plant that prefers temperate to warm climates and well-drained soils.
Unlike many other beans, Azuki beans are primarily known for their sweet applications. They are widely used to make sweet bean paste (anko), a common ingredient in Asian pastries, desserts, and confections. They are also added to rice dishes, sweet soups, and can be used as a flour or sprouted for fresh consumption.
